Mage have a huge lack of class quests for spells apart from Polymorph Pig. Conjure spells are now obsolete as trainer's teach them, so I will only cover the basics in this guide.
Each Teleport spell is trained at a portal trainer, which is usually located near the mage trainers in a major city. In Shattrath the portal trainer is located in the center of the city, near the various city portals.
The reagent [Rune of Teleportation] stacks to 10 and can be purchased at any reagent vendor for 10Silver.
The reagent [Rune of Portals] stacks to 20 and can be purchased at any reagent vendor for 20Silver.
This spell is not on the same cooldown timer as your Hearthstone.
You will appear in the capital city near the portal trainer of that city. In Stormwind, for example, you appear inside the mage tower at the center of the Mage Quarter.
You cannot learn the teleport spells of the opposing faction.
Teleport cannot be cast in combat.
Teleport/Portal's (Horde). - Ask a guard for directions to Mage trainer as the portal trainer is always close by.
With the exception of Thunderbluff who have a portal trainer in spirit rise.
Level 20 - Teleport Orgrimmar.
Level 20 - Teleport Silvermoon City.
Level 20 - Teleport Undercity.
Level 30 - Teleport ThunderBluff.
Level 40 - Portal Orgrimmar.
Level 40 - Portal Silvermoon City.
Level 40 - Portal Undercity.

Level 60 - Teleport Shattrath City.
Level 65 - Portal Shattrath City.

Polymorph Pig Quest - Both Horde/Alliance.
Start NPC :- Archmage Xylem (Ashzara).
The NPC to speak with to get to Archmage is Sanath Lim-yo,
He has blue question mark on him and is at cosmos 28,50. Without cosmos, head up the road from gryphmaster to the fork that leads to Ruins of Eldarath... directly north of the fork split is your entrance mob.
1) Retrieve the Prismatic Shell for Archmage Xylem. The Archmage resides in a tower atop the cliffs of Azshara.
2) Polymorph the Spitelash of Azshara and kill the clones that appear several seconds later. When you have slain 50 Polymorph Clones, return to Archmage Xylem in Azshara.

Polymorph Turtle Spell :-
This can drop from the fish boss, Gahz'ranka in Zul'Gurub. He is a summonable boss.
Common questions :-
1) What spells are the best for dps and survivability - For DPS id say fire hands down, Pyroblast with combustion on can do evil damage.
Frost is best for survivablity where as Arcana has some all round good extras like Presence of mind.
2) How can i AoE grind - I'd suggest checking forums online for info for that as AoE grind can be deadly if not done correctly, so I wont take responsibility for loss of durability.
3) Are learning teleports and portals really worth it since theres portals outside each city - Exactly that, outside each city, so if say your in the middle of nowhere and your hearthstone is set closeby, you can teleport to a city easy with the runes of teleportation, and there cheap too!.
