I'll use your strawberry example in my instructions.
1. Press 'L' or select your Lasso in the toolbox on your left. Then, slowly use the lasso to click and drag, tracing around the outline of the strawberry. You should see a dotted line forming in the path of your mouse. It might help to zoom in (ctrl-+ or command-+ if you're on a Mac).
2. When you're done, you should see a dotted line outlining the whole strawberry. Right-click within this outline and select "New Layer by Cut" or something like that.
3. Look down at your Layers palette. It should be on the right. If it's not there, click "Window" at the top and select "Layers". There should be 2 layers there: one with just the strawberry, and one with the rest of your photo minus the strawberry. Click on the one with the rest of your photo.
4. Press Ctrl-U or Command-U (if you're on a Mac). The Hue/Saturation panel should come up. Drag the Saturation slider all the way to zero. Click OK.
5. Click "Layers" at the top and select "Flatten image".
You're done.
